from the cheddar box gourmet restaurant in louisville (ky), they charge $40 for one!
1 12 oz package grated sharp cheddar cheese at room temp
1 c pecans chopped
1 med onion
2 8oz pkgs cream cheese, softened
1/2 mango chutney (or any jam like mango spread)
1/2 c frozen spinach, thawed
1/2 t garlic salt
1/2 t oregano
1 T beef granules
1/2 t basil
dash pepper, celery seed, cumin and nutmeg
combine cheddar cheese with pecans and onion. place half of the mixture in an 8″ round souffle dish.
combine 8oz cream cheese with the chutney blend thoroughly. spread over cheddar cheese mixture.
drain spinach completely, squeeze (really squeeze) out all excess moisture. add seasonings and remaining 8oz of cream cheese. blend thoroughly.
Top with remaining cheddar cheese mixture. refrigerate until serving time.
To serve invert on a plate and serve with crackers.
Thank you moved 1000 miles from Louisville and CB would not give out their recipe. I will try this hope its the same. This is a must if you go to Louisville.

It does taste the same. I did add a little mayo to the first layer. This recipe does make a large one.
I am not sure what this tastes like, but this isn’t the recipe from the Cheddar Box in Louisville. I used to work there and I know this isn’t the recipe.
WOuld you give us the recipe for the torte if this is not it?

look online for Kentucky Derby Cheese torte it is the closest I have come to the CB
I am not sure where this conversation went but I would like to comment about the Derby Torte. I’ve had the one from Cheddar Box several times. It’s very good, but it’s not as good as this recipe. Maybe they don’t add as much chutney or beef granules at the CB but I have never taken this anywhere without rave reviews. My original recipe suggested the souffle dish be placed in warm water before inverting. This takes a bit of time but it is wonderful.
I live in Louisville and my office is across the street from the Cheddar Box Cafe. This torte is close, but:
-There is a little mayo in the cheddar cheese layer to hold it all together.
-the spices are all in the cream cheese layer.
-they do not mix anything with the spinach layer.

I’ve made this for years and lost my original recipe that Cheddar Box printed in CJ & Times. I was delighted to find this and what I remember was there was three distinct layers. One is the cheddar, onion, pecan mix, One is the cream cheese and chutney mixture, and one is the spinach, cream cheese and spices mixture.
I always get raves on this and plan to make one for my office party and another for a family gathering.
